Madcat asked me to blog this tonight, so he can remember the perfect chicken salad and falafels. He made an amazing (as usual) roast chicken and potatoes for supper last night; juicy, succulent, slow-cooked, crispy. Delicious. The gravy from the drippings was one of the best I've ever made.
Today, we didn't feel like anything too heavy. So I took what was left of the chicken and shredded it, then topped it with about 15 halved cherry tomatoes, mung bean sprouts, an avo, a variety of baby lettuce leaves, and low-fat feta cheese. Tossed the lot in balsamic vinegar and olive oil, plus my secret ingredient - sushi vinegar - the best accompaniment I've ever found for avo.
Falafels were made from the ubiquitous Chilli Bites mix (to be found in virtually every supermarket in South Africa), chopped onions added and fried quickly. Super-crispy and delicious.
MadCat - not known for his interest in salad - got that faraway look in his eyes, that surprised look on his face, put his head down and devoured every bit of salad in five minutes flat.
